Let Instant Pot work for 40 minutes. Your part is about 5 minutes.
I tried lamb shank and lamb shoulder arm chop. They are all good.
- Put 2 lamb shanks (about 2 lbs) in the 6 quart instant pot. Add enough water to cover the meat, spices (whatever you typically use for meat, like rosemary, basil, thyme, parsley, sage etc). Choose “meat”, “more” for 38 minutes (28 minutes for lamb shoulder arm chop). Then natural release.
2. Pre-heat oven to 400 degrees. Also pre-heat a small iron cast pan or stainless steel pan on your stove on medium heat. Oil the pan and transfer lamb shanks from the instant pot to the pan.
3. Season generously: ground cumin powder and smoked paprika. Then sprinkle McCormick Steak Seasoning to taste. Then do the same for the other side.
4. Put the pan in the oven for about 3 minutes or until golden brown. Then enjoy!
